What child (OK–and adult!) does not love gummy bears? They’re the perfect road trip snack, and once I start popping them in my mouth it’s hard to stop.
This summer my kids have been begging me to make some homemade popsicles. Since I’m late into my third trimester, I kept putting them off. #pregnancyproblems
But then, we got a sweet shipment (literally!) from Surf Sweets that was full of gummy bears. I thought this would be the perfect chance to do some experimenting with the fun flavors, color and texture of their gummy bears as well as fulfill my kids request for some homemade popsicles.
We all know gummy bears can be melted. It’s been a YouTube phenomenon where people will melt lots of gummy bears to make one big mold–so I knew that they could be re-purposed.
But–I didn’t want one big gummy. I wanted it to be a popsicle that could freeze and still be juicy. So, I set out to find the perfect ratio where there was enough juice added it would be liquid and therefore freeze-able, but still retain it’s color, taste and have some gumminess to it–making it a unique popsicle to eat.
I FOUND IT!
THE PERFECT GUMMY BEAR POPSICLE RATIO:
If you melt 48 gummy bears with 1 and 1/2 cups apple juice, it will be the perfect consistency for four popsicles. Of course, you could dilute it some more, or even do a little less liquid depending on the texture you want. I’d start with this, see how you like it (we loved it!) and then tweak the next batch.
DO I HAVE TO USE ALL THE SAME COLOR OF GUMMY BEARS?
No. I am just a sucker for ombre–so I divided out my gummy bears by color, and melted and froze them individually by color. (It went yellow, orange, red.) As you can see, it resulted in a beautiful finished product.
It does take longer to do it this way. Melting it only takes a minute or two, but waiting for each color to freeze enough before pouring the next color does take some patience (usually at least 1-2 hours in a deep freezer).
If you are in a hurry–you can always use multiple colors at once, and simply pour it all in, without waiting for each layer to set up. Either way it will be delicious! Because as well all know, you typically shove a big handful of gummy bears in your mouth at once, and I’ve never tired of the complimenting flavors all being enjoyed at the same time.
DO THE GUMMY BEAR POPSICLES MELT?
Yes. Thanks to the organic apple juice, it’s broken down the gelatin enough to still melt. It’s a really unique gummy texture as you’ll see in the picture below, that I actually prefer with my little kids. When we do just juice pops–they end up being one big hard brick of ice. They tend to drip a lot and be messy. I found the gummy helps the popsicle retain its shape. Plus, for little sensitive teeth, my son said he much preferred biting into the softer gummy pop than a traditional juice pop. MOM WIN!

How to Make Popsicles Out of Gummy Bears
Take the delicious flavor of gummy bears and learn how to turn them into the most delicious jelly popsicles with only 2 ingredients! Instructions
OMBRE INSTRUCTIONS:
- Separate gummy bears by color. (I did yellow, orange and red.)
- In a small saucepan over medium heat, place 16 gummy bears of one color and 1/2 cup apple juice.
- Stir frequently with a silicone/heat proof spatula until the gummy bears are melted and everything is combined.
- Carefully pour an equal amount into each of the four popsicle molds. Rinse the sauce pan out.
- Place the top on the molds, and insert the wooden stick.
- Place the mold in a freezer for 1-2 hours, or until the layer has set.
- Once the layer has set, choose your next color of gummy bear and place 16 of that color into the small sauce pan. Add 1/2 cup of apple juice. Stir and melt like before, until everything is incorporated.
- Divide and carefully pour the second color onto top of the first color. Rinse the sauce pan.
- Place the lid back on the mold, and place it in the freezer again for the second layer to set up, 1-2 hours.
- Once the second layer is set, take your third and final color of gummy bear and place 16 of them in the small sauce pan. Stir and melt like before, until everything is incorporated.
- Carefully pour the final color on top of the two set layers, being careful to not overfill.
- Place the popsicle mold back in the freezer for the final set, 1-2 hours (depending on the temperature of your freezer.)
- When ready to serve, run hot water over the popsicle mold to loosen them enough to pull out. Serve immediately.
ONE COLOR INSTRUCTIONS:
- Place 48 gummy bears (either all of the same color, or multi colored) in a small sauce pan. Place 1 and 1/2 cups apple juice.
- Melt them together over medium high heat, stirring frequently with a heat safe./silicone spatula.
- Carefully pour the melted mixture into your popsicle molds, being careful to not overfill them. Place the wooden popsicle sticks in the center.
- Freezer 3-4 hours, or until set (depending on the temperature of your freezer.)
- When ready to serve, run hot water over the popsicle mold to loosen them enough to pull out. Serve immediately.

BONUS: SUMMER FOOD CRAFT WITH JELLY BEANS!
Oh momma–do I know that summer can be equally awesome and equally hard all at the same time. For me, I love having my kids home all day, but sometimes it gets hard to keep little ones entertained ALL DAY.
There are two phrases I hear over and over all summer: “Can we have a treat?” and “We’re bored.”
So, I took Surf Sweets jelly beans and turned into into a treat that is ALSO an activity.
I waited for my kids to ask if they could have a treat. I then said that they could (which already got them excited) IF they made some art with them first.
I drew some simple grass and flower stems on white paper with green crayon. I then told them they had to arrange the jelly beans to make the flower. With the multiple pretty pastels Surf Sweets has, it was easy for them to do.
It was nice to see them use their imagination and work quietly for a few minutes. They of course loved the reward at the end. It was a win-win.
If someone as artistically challenged as I am could whip this up, then you can too! Here’s a stop motion video to show you how simple it really is:
I’d love to see photos of how you and your kids get some extra mileage out of the jelly beans, and to see what colors and varieties you make of the gummy bear popsicles. Be sure to tag me in your social media so I can see!
