Life is about evolving.
I grew up not caring to learn any of the awesome dishes my mom cranked out. That wasn’t for me.
I then grew up a little bit more, and loved my independence. Who needed a man? That wasn’t for me…until I met Big C.
I grew up a bit more and loved my husband and my career. Who needed kids? That wasn’t for me.
I then had a kid and realized that I needed to learn to cook, so I took to the Internet to learn all sorts of new recipes. Who needed to worry about food allergies? That wasn’t for me.
My world was then turned upside down when my son was diagnosed with a rare disease called eosinophilic esophagitis in 2013. Because of this not-so-awesome disease, my son has 30+ food allergies I have to work around. I had to take everything I had learned about cooking and start from scratch.
After hours upon countless hours of trial and error in my kitchen I’ve stumbled across some awesome recipes that are allergy-friendly.
With Celiac, Crohn’s disease, food intolerances, food allergies, and other rare diseases out there that cause dietary restrictions I wanted to share the recipes I’ve found that help make life a little bit more awesome.
Plus, I feel like since I’ve been so open with our food struggles, I often get requests of “I’m having a cousin over for dinner who has food allergies, what do I serve them?” It seems that everyone, whether they have a direct relative or not is stumbling across having to feed people with limited diets at some point.
As I’ve learned in my short life, a lot of things I thought “weren’t for me” ended up being exactly what I needed. While I still don’t love this disease, it’s obviously been placed in my path for a reason. I’m happy to share what I’ve learned along the way and hope that these recipes can help others out there. Even if you don’t suffer from any food allergies, you may end up having to cook for a relative, friend, or neighbor and I hope that my blog will be a safe haven you can find awesome recipes.
You can give up ingredients, but you don’t have to give up awesomeness.
