When it’s been a long day of parenting, I like to treat myself after my kids have gone to bed. And, what easier treat is there than an Udi’s store-bought mug cake that is gluten, dairy, soy and nut free?
We’ve all been there. We’re counting down the minutes until it’s bedtime. School, homework, errands, sports and dinner have left you haggard. Once my kiddos are safely asleep, that’s when I break out the mom treat. IF you’re a mom, you know EXACTLY what a mom treat is. Seriously, if my kids knew how many treats I eat after they go to bed, they’d be even HARDER to put down.
I honest-to-goodness have a treat almost every night to end the day on a positive and to give myself a moment to relax. Let’s call it self care so it sounds better. For me, there’s no better way to relax than with chocolate! I want to enjoy something delicious to celebrate the momming that I did (or at least tried to do!).
Thanks to , all I have to do is break open a package, add some rice milk (I used the same measurement as it called for, just swapped rice milk for regular milk!), and pop it in the microwave for a quick and satisfying treat.
The best part? There are four mixes to a box! So if my husband is wanting a bedtime snack as well, there’s plenty to share. This is especially great since he’s gluten intolerant, so it’s a treat we can enjoy together. Because my hands-on husband deserves a treat just as much as I do after parenting hard!
Because, let’s be honest, as much as I love baking, sometimes you’ve just barely finished dinner dishes and even though the craving for something sweet is strong, you don’t want to bake from scratch and mess up that clean kitchen. And, in my opinion, no candy or store-bought treat compares to a warm, freshly baked chocolate cake. The fact that it only takes 60-70 seconds is just icing on the cake!
Speaking of store bought, these were super easy to find. Here’s a picture of where I found it at Walmart. My Walmart has a dedicated gluten free section, and they were next to the box mixes. They make it easy to spot the gluten free section with the brown “gluten free” tags below.
And, don’t be shy. Load up on a few while you’re there, like I did—and maybe even put the safety restraint over them. This is precious cargo, people! I love that a big-box store like Walmart offers these, making it accessible and easy to find (my city even has two Walmart’s! #winning). You can save now on Udi’s with this Ibotta offer.
Feel free to enjoy the mug cake plain. I like to top mine with dairy-free whipped topping and sprinkles, of course. It’s also divine with a little drizzle of dairy-free chocolate sauce or some homemade gluten free vegan caramel (if you keep some in the fridge like I often do!).
And for my allergy-friendly readers, who need to see a label to see exactly what’s in it, I got you covered (or if you want to see just how easy the directions truly are. Please see the photo above.
Dress it up or dress it down. I hope that you’ll also be able to enjoy just the right amount of chocolate (thank you single serving packets!) when you need it—whether it be at the end of the day like me (so you can eat in peace and quiet…hello three noisy kids!) or even after lunch. Basically, whenever the craving strikes, it will be a cinch to whip one of these up.

Great post. I’d add a note for people allergic to legumes that this contains pea flour.
