Miami Vice Smoothie (GF, DF, Egg, Soy, Peanut, Tree nut Free, Top 8 Free, Vegan)

A fruity smoothie filled with fresh pineapple, tart frozen strawberries, orange zest and lime juice--all the cool fruits, basically, all in a coconut milk base make for a tropical smoothie--perfect for Monday morning breakfasts when you need an extra pick me up to get going.
Ingredients
  • 8 oz can of full fat coconut milk (light could be substituted, but I'm always trying to get more calories on my EOE kid)
  • ½ cup cold water
  • 4 Tablespoons maple syrup (this can be lessened, if you like less sugar in the mornings--just taste and adjust as needed, depending on the sweetness of your strawberries, mine weren't very ripe)
  • 1 Tablespoon lime juice
  • ½ teaspoon of orange zest
  • ½ medium banana
  • ½ of a peeled orange
  • 2 cups fresh pineapple chunks
  • 2 cups frozen strawberries
Instructions
  1. Put all of the ingredients in a blender in the order they're written. So, starting with the coconut milk down to the frozen strawberries, so that the liquid is in the bottom, and the frozen strawberries are on top.
  2. Blend until smooth.
  3. Garnish with additional pineapple or orange slices on the glass. Store leftover smoothie in the fridge for a day.
